Ingredients:
For the salad:
2 medium heads of broccoli, chopped
1 large carrot, grated
1 apple, cored and finely chopped
¼ cup onion, finely chopped
½ cup walnuts
¼ cup cranberries or raisins
For the dressing:
½ cup veganise (vegan mayo)
½ cup vegan sour cream
2 Tbsp lemon juice
2 Tbsp maple syrup
¼ tsp sea salt
Pinch of pepper
Directions:
Toast the walnuts over medium/high heat in a skillet for 4-5 minutes, tossing them occasionally so they don’t burn. Then, chop the walnuts coarsely.
In a large bowl, combine the broccoli, carrot, apple, onion, walnuts and cranberries or raisins.
In a small bowl, combine the ingredients for the dressing and mix well.
Pour the dressing over the salad and stir to combine.
Serve and enjoy!
