This is a simple and quick salad. I try to eat one salad a day to get in my greens or I add kale to my fruit smoothie.
Ingredients:
For the salad:
1 cucumber
4-5 ripe vine tomatoes
½ red pepper
½ orange pepper
½ small red onion
Vegan mozzarella, cheese cubed
Few black olives, chopped
For the dressing:
1 Tbsp red wine vinegar
2 Tbsp olive oil
2 tsp dried oregano
¼ tsp salt
Directions:
In a small bowl, add the ingredients for the dressing and mix well. Set aside.
Dice the cucumber, tomatoes, peppers, olives and onion.
In a large bowl, add the vegetables, vegan mozzarella cheese, and the dressing.
Mix well.
Serve and enjoy!
