Vegan Lentil Soup

Check out this healthy, gluten-free, vegan lentil soup. This is one of my favourite creations. You will love this soup! It goes great with a salad too.




Ingredients:

1 cup green lentils

½ cup red onion, chopped

3 garlic cloves, pressed

1 cup carrots, chopped

1 cup of celery, chopped

1/2 cup of mushrooms, chopped

1 green zucchini

1 cup of potatoes

2 cups spinach (optional)

1 red peppers chopped

1 yellow pepper, chopped

6 cups of water

3 vegetable bouillon cubes

1 Tbsp soy sauce

4 tsp cumin

Sea salt and pepper, to taste

Directions:

Soak the lentils overnight or for 3 hours in a cup of water.

Boil 6 cups of water and add the bouillon cubes, lentils in a pot. When the lentils are done cooking and are tender, set aside.

In a frying pan, on medium heat, sauté the onions, garlic, peppers, zucchini, potatoes, carrots, and spinach.

Add the sautéed vegetables, soy sauce, cumin, sea salt, and pepper to the pot of lentils.

Simmer for 45 minutes, stirring occasionally.

Taste to see if ready.

Serve and enjoy!
