Babaganoush Stuffed Peppers Vegan & Gluten-Free

This is a delicious lunch idea! I created this recipe last year and its my go to recipe when I'm in a rush for work.

Ingredients:

½ cup of quinoa

3 peppers, red, yellow or orange

2 tomatoes, sliced

½ cucumber, sliced

1 pkg alfalfa sprouts

1 pkg micro green mix

1 container of Sabra Babaganoush hummus

Pinch of sea salt

Pinch of pepper

Directions:


Combine ½ cup of the dry quinoa with 1 cup of water in a saucepan and bring to a boil. Cover, reduce to a simmer and cook for 10 minutes.

Wash all the vegetables. Cut the peppers in half vertically and remove all the seeds.

Spread the hummus on the inside of each pepper. Add 2 Tbsp of the cooked quinoa on top of the hummus.

Add slices of the tomato and cucumber on top of quinoa and season with the sea salt and pepper.

Add a handful of alfalfa sprouts and micro greens on top.

Serve cold. Enjoy!
