Ingredients:
1 cup quinoa
2 cups water
1 vegetable bouillon cube
1 can of black beans
1 small can of corn
3-4 medium sweet potatoes
1 Spanish red onion
3 limes, squeezed
4 Tbsp maple syrup
3 garlic cloves
11/2 Tbsp olive oil
2 Tbsp cumin
1 tsp paprika
1 tsp ground coriander
1/4 - 1/2 cup of fresh cilantro
1/2 tsp sea salt
1/4 tsp pepper
Directions:
⦁ Preheat the oven to 400°F.
⦁ In a large pot combine 2 cups of water, quinoa and the vegetable bouillon cube. Be
sure to rinse the quinoa very well. Boil over medium heat until there is no more water
remaining.
⦁ Peel and chopped the sweet potatoes into cubes. Put the potatoes into a pot of water
and boil until soft. Set aside.
⦁ In a frying pan, add the olive oil, red onions and garlic.
⦁ Once the onions are done sauteing, add the rinsed black beans and corn. Next add the
spices (cumin, paprika, sea salt,pepper and ground coriander).
Next, add the juice of the limes, maple syrup and cilantro. Cover the frying pan with a
lid to and cook for another 10 minutes.
⦁ Next, add the sweet potatoes and quinoa to the frying pan. Cook for another 5 minutes
and serve.
