Ingredients
2 medium overripe bananas
1 cup unsweetened almond milk or soy milk
1/2 Tbsp vanilla extract
1/4 cup coconut oil
1 tsp apple cider vinegar
1/2 cup brown sugar
1 Tbsp ground flaxseed
1/4 tsp sea salt
1/2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
2 cup of gluten free flour (I used Bob Mill's 1 to 1 baking flour)
1/2 cup vegan/dairy-free chocolate chips
Instructions
Preheat the oven to 350°F (177°C).
In a large mixing bowl, mash the bananas with a fork.
Stir the wet ingredients into the bowl with the mashed bananas.
Mix the dry ingredients together and slowly fold into the wet mixture.
Line your loaf pan with parchment paper and pour the batter using a spatula into the pan.
Optional- add walnuts or slices of banana on top of batter.
Bake for 60-65 minutes.
Take out of the oven and let cool. Serve & Enjoy!
