Ingredients
2 cups of gluten-free wild rice
1/2 medium red Spanish onion (diced)
2-4 sweet potatoes (chopped into small cubes)
2 cups of kale ( stems removed )
1 can of pinto beans (rinse well)
1/4 tsp each salt + pepper
1-2 cups of romaine lettuce
1 cup of fresh or canned corn
1/2 of an avocado
1/2 cup of black beans (rinse well)
1/4-1/2 cup of edamames
Optional
1/4 Salsa
Or
Tahini sauce-Homemade option
1 Tbsp maple syrup
3 Tbsp hot water
1/2 medium lemon (juiced)
Serve in a large bowl. Enjoy!
