High Protein Buddha Bowl

Ingredients


  • 2 cups of gluten-free wild rice

  • 1/2 medium red Spanish onion (diced)

  • 2-4 sweet potatoes (chopped into small cubes)

  • 2 cups of kale ( stems removed )

  • 1 can of pinto beans (rinse well)

  • 1/4 tsp each salt + pepper

  • 1-2 cups of romaine lettuce

  • 1 cup of fresh or canned corn

  • 1/2 of an avocado

  • 1/2 cup of black beans (rinse well)

  • 1/4-1/2 cup of edamames


Optional

  • 1/4 Salsa

Or


Tahini sauce-Homemade option

  • 1 Tbsp maple syrup

  • 3 Tbsp hot water

  • 1/2 medium lemon (juiced)


Serve in a large bowl. Enjoy!
