Low Fat-Vegan Zucchini Spaghetti

Looking for a gluten-free option? Try this homemade vegan zucchini dish. It is delicious and will make you feel full.


Ingredients:


1 zucchini (use spiralizer machine to make the desired noodle size)

1/4 cup of water

1/3 cup of steamed edamames (prepare in advance)

1/2 of a red onion

2 cloves of garlic (crushed)

1/2 cup of spinach

1/4 cup of mushrooms sliced

1/2 of red pepper (chopped)

3/4-1 cup of Classico roasted garlic sauce

1 tsp of hemp seeds

1 Tbsp of nutritional yeast


Directions


In a sauce pan, add the water and bring to a boil. (I try to avoid oils and it's not necessary to saute vegetables.) Bring the heat down to a medium temperature and add the onions and garlic and saute until golden brown. You may need to add more water. Be sure to stir frequently stir to prevent the onions from sticking to the sauce pan. Add the chopped red pepper, sliced mushrooms and edamames. Add a lid to keep the moisture inside. Allow to cook until a bit tender and add the spinach, nutritional yeast and Classico spaghetti sauce. Bring the temperature down to simmer. While these veggies are sauteing in the sauce, spiralize the zucchini. Add the zucchini noodles to the pan and stir until the noodles are covered in sauce. Cook until the desired consistency. If you like your dishes to have a variety of consistencies don't over cook the noodles or they will become too tender. Add the cooked veggies and noodles to a bowl or plate and add hemp seeds on top. Serve and enjoy!
