Skip the meat and add more veggies. If you want to make your skewers more sweet add some pineapple. Pineapple tastes great roasted.
Ingredients:
1 pineapple, cubed
3 peppers (orange, yellow and red), chopped
2 carrots, sliced
1 large red onion, chopped
1 cup cherry tomatoes
1 cup mushrooms
2 zucchinis (yellow & green), sliced
For the marinade:
¼ cup olive oil
4 cloves garlic, pressed
1 lemon, juiced
1 tsp oregano, dried
1 tsp sea salt
1 tsp pepper
Directions:
Preheat the oven to 400°F.
In a small bowl, whisk together olive oil, garlic, lemon juice, oregano, sea salt, and pepper. Set aside.
Slide the pineapple, peppers, carrots, onion, cherry tomatoes, mushrooms, and zucchini onto the skewers. Place the skewers on a baking sheet or BBQ.
Brush the marinade sauce onto the skewers.
Bake or BBQ for10-12 minutes or until golden.
