Veggie Skewers-Vegan & Gluten Free

Skip the meat and add more veggies. If you want to make your skewers more sweet add some pineapple. Pineapple tastes great roasted.

Ingredients:

1 pineapple, cubed

3 peppers (orange, yellow and red), chopped

2 carrots, sliced

1 large red onion, chopped

1 cup cherry tomatoes

1 cup mushrooms

2 zucchinis (yellow & green), sliced

For the marinade:

¼ cup olive oil

4 cloves garlic, pressed

1 lemon, juiced

1 tsp oregano, dried

1 tsp sea salt

1 tsp pepper

Directions:

  • Preheat the oven to 400°F.

  • In a small bowl, whisk together olive oil, garlic, lemon juice, oregano, sea salt, and pepper. Set aside.

  • Slide the pineapple, peppers, carrots, onion, cherry tomatoes, mushrooms, and zucchini onto the skewers. Place the skewers on a baking sheet or BBQ.

  • Brush the marinade sauce onto the skewers.

  • Bake or BBQ for10-12 minutes or until golden.
