Potato Patties-Oil free

Ingredients


6 medium size potatoes, steamed or boiled

1 red onion, minced

1 red or orange bell pepper, chopped finely

1 zucchini, chopped into small pieces

1/2 cup of cilantro

1/4 cup of parsley

1 Tbsp of garlic powder

Sea salt & pepper (add as much or little as you desire)


Directions


  • Preheat oven to 425 F.

  • Wash and peel the potatoes. Place in a pot and boil or steam them until tender. Mash the potatoes using a potato masher in a large mixing bowl and set aside.

  • In a frying pan add approximately 1/4 cup of water. Add the red onion and saute. Stir frequently to avoid sticking. Add more water if needed.

  • Once the onion is cooked, add the red bell pepper and zucchini. Continue to add more water to the frying pan if the veggies are sticking.

  • Continue to stir frequently and add the cilantro, parsley and garlic powder. Drain any excess water from the frying pan.

  • Add the veggie mixture to the large bowl of mashed potatoes and stir until well combined. Add salt and pepper to taste.

  • Begin forming patties in the palm of your hand. Place the patties on a baking sheet lined with parchment.

  • Bake in the oven for 20-25 minutes. Check them periodically. They should appear golden and crispy. Cook longer if needed.

  • You can enjoy these plain, with ketchup or any other condiment.
