Ingredients
6 medium size potatoes, steamed or boiled
1 red onion, minced
1 red or orange bell pepper, chopped finely
1 zucchini, chopped into small pieces
1/2 cup of cilantro
1/4 cup of parsley
1 Tbsp of garlic powder
Sea salt & pepper (add as much or little as you desire)
Directions
Preheat oven to 425 F.
Wash and peel the potatoes. Place in a pot and boil or steam them until tender. Mash the potatoes using a potato masher in a large mixing bowl and set aside.
In a frying pan add approximately 1/4 cup of water. Add the red onion and saute. Stir frequently to avoid sticking. Add more water if needed.
Once the onion is cooked, add the red bell pepper and zucchini. Continue to add more water to the frying pan if the veggies are sticking.
Continue to stir frequently and add the cilantro, parsley and garlic powder. Drain any excess water from the frying pan.
Add the veggie mixture to the large bowl of mashed potatoes and stir until well combined. Add salt and pepper to taste.
Begin forming patties in the palm of your hand. Place the patties on a baking sheet lined with parchment.
Bake in the oven for 20-25 minutes. Check them periodically. They should appear golden and crispy. Cook longer if needed.
You can enjoy these plain, with ketchup or any other condiment.
