Vegan Carrot Bacon

Be sure to serve this Vegan Carrot Bacon with my Tofu Scrambled Eggs.

Ingredients:


4 large carrots, thinly sliced

4 Tbsp tahini

3 Tbsp maple syrup

2 Tbsp olive oil

2 tsp soy sauce or coconut aminos

Directions:

  • Preheat the oven to 400°F.

  • Peel the carrots and slice them very thinly.

  • In a small bowl, mix together the remaining ingredients until it becomes a thick marinade sauce.

  • Place the carrots and marinade into a dish and mix together.

  • Place the coated carrot strips on to a cookie sheet.

  • Bake for 15 minutes or until crispy.

  • Serve and enjoy!
