Vegan Chili

Ingredients

28 oz can crushed tomato

6 oz tomato paste

8 oz can tomato sauce

1 zucchini

1 green pepper

1 red pepper

1 cup corn

1 ½ cups cooked kidney beans

1 ½ cups black beans

2 Tbsp olive oil

2 medium white onions

2 tsp salt

1/2 tsp pepper

1 tsp ground cumin

2 Tbsp chili powder

1 Tbsp maple syrup

Directions


In a frying pan add olive oil and onions and sauté until golden brown. Add the chopped bell peppers and zucchini into the frying pan and cook until tender. Next, add sauteed veggies into a large pot and add all the spices and maple syrup. Stir in tomato paste, sauce, crushed tomatoes, black beans and kidney beans. Cook for 30 minutes on medium heat and then simmer for 10 minutes.
