Chocolate Chip & Almond Cookies

Ingredients


⅔ cup walnuts

3 cups almond flour

½ tsp baking soda

¾ cup brown sugar or coconut sugar

½ tsp sea salt

½ cup dairy-free chocolate chips

2 Tbsp flaxseed meal

4 Tbsp of water

¼ cup coconut oil

½ cup vegan butter

2 tsp vanilla extract


Directions


Preheat the oven to 350°F.

In a small bowl, mix together the flaxseed meal and water. Let set for 5 minutes.

In a large mixing bowl, mix together the dry ingredients.

In a medium mixing bowl, mix together the wet ingredients with the flaxseed/water mixture.

Add the wet ingredients to the dry ingredients and mix together.

Grease a cookie sheet with coconut oil. Using a tablespoon, scoop the dough and place it on the cookie sheet with each cookie spaced evenly apart.

Bake in the oven for 15-20 minutes.
