Rice Casserole

Ingredients


1 cup gluten-free brown rice

2 cups of water

1 can of refried beans

1 Spanish onion, chopped

1 red, yellow and orange pepper chopped

1 cup of broccoli, chopped

2 Tbsp olive oil

4 tsp cumin

2 tsp chili powder

Sea salt and pepper, to taste


1 cup vegan shredded cheese


Directions:


⦁ Preheat the oven to 400°F.

⦁ In a large pot, add two cups of water, 1 Tbsp of olive oil, a dash of sea salt and

gluten-free rice. When all the water is absorbed, set aside.

⦁ In a frying pan, add 1 Tbsp of olive oil and onions and saute until golden brown. Add

the peppers and spices and cook until the veggies are soft.

⦁ In a 9 x 13 baking dish spread the refried beans on the bottom using a spatula. Mix the

veggies and rice together and add on top of the refried bans.

Sprinkle on the vegan cheese on top and bake for 20 minutes.
