Sweet Potato Quinoa Fritters

This is a great dinner meal. You can serve it with a side salad.

Ingredients:

2½ cups sweet potato, shredded

⅓ cup quinoa flour

½ cup scallions, chopped

1 lflaxseed egg (1 Tbsp flaxseed meal + 3 Tbsp water, let set for 5 min)

Sea aalt and pepper, to taste

2-3 Tbsp olive oil

Directions:

  • In a large bowl, combine the sweet potato, flour, scallions, flaxseed egg, salt, and pepper.

  • In a large pan, over medium-high heat, add the olive oil. Once the oil is hot, form small patties out of the sweet potato mixture with your hands and add to the pan.

  • Cook the fritters until golden brown, about 2-3 minutes, then flip and cook an additional 2 minutes. Transfer the fritters to a cooling rack.

  • Repeat this process with the remaining mixture.

  • Serve slightly warm.
