This is a great dinner meal. You can serve it with a side salad.
Ingredients:
2½ cups sweet potato, shredded
⅓ cup quinoa flour
½ cup scallions, chopped
1 lflaxseed egg (1 Tbsp flaxseed meal + 3 Tbsp water, let set for 5 min)
Sea aalt and pepper, to taste
2-3 Tbsp olive oil
Directions:
In a large bowl, combine the sweet potato, flour, scallions, flaxseed egg, salt, and pepper.
In a large pan, over medium-high heat, add the olive oil. Once the oil is hot, form small patties out of the sweet potato mixture with your hands and add to the pan.
Cook the fritters until golden brown, about 2-3 minutes, then flip and cook an additional 2 minutes. Transfer the fritters to a cooling rack.
Repeat this process with the remaining mixture.
Serve slightly warm.
