Mushroom Gravy for the Holidays

Ingredients


3 Tbsp olive oil

2½ onions, diced

6 garlic cloves, pressed

1½ cups mushrooms, sliced

5 medium potatoes, chopped

1 Tbsp soy or tamari sauce

3 cups water

½ tsp sea salt

½ tsp pepper


Directions


Over medium heat, sauté the onions and garlic with olive oil. Once golden, add the mushrooms and potatoes.

Next, add the remaining ingredients.

Saute until the potatoes are soft.

Add the mixture to a blender or food processor and blend/process until it has the consistency of gravy.
